If you read my Southwestern Black Bean Salad post then you know that I have a hard time with things that are too flavorful and strong. I’m getting used to flavors like spices and citrus since I’ve been on this journey. After I made my salad I made a Smoky Spiced Snack Mix (also from WW!) I’ve been searching for a yummy, guilt free snack that I can take with me on the go!
4 c. plain air popped popcorn
4 c. multi-bran cereal
1 c. mini pretzel rods
2 TBSP unsalted melted butter
1 TSP light brown sugar (I added 2 for more sweetness)
1 TSP smoked paprika (I only added an eighth. Too strong for me!)
1/2 TSP salt (I also added an eighth of salt to reduce sodium intake)
1/8 TSP Cayenne Pepper
Toss your popcorn, pretzels, and cereal into a bowl and mix it together.
Combine your butter, salt, paprika, cayenne, and brown sugar into a bowl and mix well. Note: two teaspoons of light brown sugar will make the drizzle thicker.
Coat your crunchy snack with the drizzle and bake at 300 for about 30 minutes. (I would recommend a little less time.) Let your snack cool completely before eating.
Unlike the salad, I was really pleased with the adjustments I made to this recipe. I didn’t want it to be too strong so adding a little more sweetness and losing a little spiciness was the perfect combination for me! This snack is great for on-the-go eating and it would be a great alternative to butter-soaked popcorn at the movies!
