Garlic Roasted Chicken & Potatoes with Green Beans

Another awesome dish that I meal prepped on Sunday was Garlic Roasted Potatoes with Green Beans. It was more of a side dish so I added chicken to the recipe for the extra protein and to make it into more of a meal. 

Ingredients: 

  • One bag of small red potatoes
  • Olive oil
  • 2 pounds of chicken (cubed)
  • Green Beans (cut and frozen)
  • Garlic salt
  • 1/2 stick of butter

  1. Wash and dice your red potatoes 
  2. Mix them in a bowl with 1/2 stick of melted (unsalted) butter before placing them on a cooking sheet
  3. Season your potatoes with garlic salt and any other seasonings of your choice
  4. Pop them in the oven at 400 degrees for 30 minutes

5. Cube and cook your chicken until done

6. Once your potatoes and chicken are done cooking, mix all three ingredients together on the pan

7. Place them back in the oven for 15 minutes

8. Enjoy!
